Ingredients:

  • Previously cooked garlic shrimp , 5 or more

  • Grated frozen raw tomato (or tomato paste), 1 cup

  • Chorizo, spicy, 2 in.

  • Green onions, 1, sliced

  • Cilantro, fresh, minced, qb

  • Basil, fresh, minced, qb

  • Himalayan Salt, qb

  • Chilly pepper, 2, whole

  • Lard, 2 TBSP

  • Butter, 1 TBSP

  • Heavy Cream, 1/3 cup

  • Zucchini, 1, spirilazed

I had this meal with a fork and spoon because I could not let ANY of that sauce escape me! If you like Thai food, feel free to change the heavy cream for coconut milk and other spices.

The shrimp, chorizo and tomato that I used had been previously frozen. The shrimp was leftovers from a previous meal. Simple garlic shrimp cooked in bacon fat and butter. That made this meal super simple and ultra fast.

How to Prepare:

  1. Heat a skillet over medium-high heat. Add 2 tablespoons lard/bacon fat. Add the frozen shrimp, chorizo and grated tomato.

  2. Stir frequently until shrimp and chorizo have thawed out. Remove chorizo piece and slice, add back into skillet.

  3. Add green onions and spices. Keep stirring.

  4. Add in heavy cream and butter and bring to a boil. 

  5. Spiralize the zucchini. Turn burner off and add zucchini to shrimp sauce and mix. Serve while hot
