Tuna Zpaghetti

Full Recipe

So this is another one of my recipes, back in my University days. I actually used to have this with spaghetti, of course, now I have it with zpaghetti (zoodles aka zucchini noodles). I also added a bit of miracle noodles in there cause I wanted a different texture. This tasted as delicious as when I had it in school, major comfort food. Food list and macro count below. Serves 2.

Ingredients:

  • 2 tbsp butter

  • 2 tbsp lard

  • 2 tbsp tomato paste

  • 1/4 c green onions

  • 3/4 c bell peppers

  • 1/4 tsp garlic salt

  • 2 organic eggs

  • 1 can tuna (in brine)

  • 1 large zucchini

  • 1 large hot chili pepper

  • salt and pepper to taste

  • 1/4 c heavy cream (35%)

  • 1/4 c crumbled feta cheese

  • 1 tbsp organic extra virgin olive oil

How to Prepare:

  1. In a skillet, fry green onions, bell peppers, tomato paste and spices in butter and lard for about 3 minutes.

  2. Remove the tuna from the can and add to sauce mix.

  3. Add in cream, feta and 2 eggs, in the last 2 minutes, and mix.

  4. Remove from heat.

  5. Spiral the zucchini noodles, and stir-fry in a separate skillet with olive oil for 30 seconds.

  6. Serve hot sauce mix on  zoodles (I added some miracle noodles for texture).
