Ingredients:

  • Bacon and/or Chorizo, sliced

  • Cabbage/Spinach/Zucchini/Mushrooms, sliced or shredded

  • Green onions, 1, sliced

  • Tomatoes, cherry, 5, cut in half

  • Himalayan Salt, qb

  • Black pepper, qb

  • Chilly pepper, 2, whole

  • Lard, 2 TBSP

  • Butter, 1 TBSP

  • Olive Oil, 1/4 cup

  • Eggs, 2, "poached"

Ratatouille

My Way

It sounds fitting that I named this dish Ratatouille, because the French, whether they know it or not, are very Keto. I make this meal very often, like every Wednesday (long story...). OK, so I will tell you the story. I see private patients on Wednesday in my "home office" which is actually my mother's house. Whenever I feel hungry, in between patients, I forage through the house and make this dish, in 10 minutes, and then eat, in 10 minutes. EVERY...TIME. There really should be no recipe attached here, cause you could make this with anything. You need fat (butter, olive oil, bacon fat), veggies (cabbage/spinach/zucchini, tomato, green onions, mushrooms...), eggs (1, 2, 3...) and bang! Bring your appetite!

How to Prepare:

  1. Heat a skillet over medium-high heat. Add bacon and/or chorizo and more lard if necessary. Fry to allow the fatty juices to flow. Add the chilly peppers.

  2. Add whatever veggies you have chosen and stir fry in the bacon fat.

  3. Cover with a lid and stir frequently until veggies have softened.

  4. Add spices. Keep stirring.

  5. Make two, or more, small holes within the veggies and crack open 2, or more eggs. Add salt to eggs. Add the extra fat (butter and olive oil).

  6. Cover with a lid and allow the eggs to "poach". 

  7. Serve while hot
