Ingredients:

3 precooked shrimp (water, salt)

1/2 cup shrimp cooking water

1 small cauliflower, riced

1/4 cup onions, chopped

4 garlic cloves, minced

1 red pepper, diced

2 tbsp butter
-
1/4 cup, fresh parsley and green onions

1 oz. blue cheese, crumbled

1 oz. Parmesan cheese

1 oz. Mozzarella cheese
Seafood Cauli Risotto

This week has been a "family affair" for me, as my aunts, cousins and I have been exchanging Keto recipes with each other. This one was adapted from my cousin Marlene's Lobster Cauli Risotto, I used Shrimp. She served the Risotto with Baked Salmon and I served it with Steak. I also added extra Mozzarella cheese at the end which really made all the difference for me. Serves 2.
How to Prepare:

Precook the shrimp in a pot, with 1 cup of water and a pinch of salt, bring to boil, and cook for 5 minutes.

Remove from heat. Remove shrimp and allow to cool. Reserve the cooking water.

In a separate pot, throw in the butter and stir fry the onions, bell peppers and garlic for 3 minutes.

Peel and cut shrimp into pieces, and add to pot with veggies.

Add the 1/2 cup of the shrimp cooking water.

Allow to boil, then add the riced cauliflower, stir and allow to cook for approximately 2 minutes.

Add in the Blue Cheese, Parmesan cheese, and lastly Mozzarella. Remove from heat and serve immediately with a side of choice (I served with Surf and Turf- Grilled steak and fried shrimp)
